- 2 pieces of frozen mango
- ½ avocado
- ½ lime
- 100 g sustainably caught white fish (1 fillet or 3 ½ oz)
- 5 ml (1 tsp) Cajun Seasoning
- 5 ml (1 tsp) olive oil
- 30 ml (2 tbsp) plain Greek yogurt
- 2 small tortillas

Dice the mango and avocado. Place the avocado in a small bowl.

Directly over the bowl, press in the half lime and mix.

Using a perfect kitchen towel, baste the cod fish. Place the Cajun preparation in a small dish and coat the fish with the flavors.

In a small non-stick skillet, heat the oil over medium-high heat.

Place the cod in the pan and cook for 4 to 5 minutes, until the fish chunks effectively with a fork, turning partially through cooking.

Notes:

For cod: halibut, haddock or cod work admirably in this recipe. In the supermarket, look for separately frozen fish fillets: convenient for cooking just one! If using frozen fish, soak it in cold water for 30 minutes to thaw, leave it in the refrigerator for a short time or simply thaw it in the microwave.
