  • Serves: 4 servings
  • Ingredients for spinach and salmon meatballs (for about 12-15 units):

For the meatballs:

  • 250g fresh spinach
  • Half an onion
  • Grated lemon peel
  • 3 slices of fresh salmon – 300g approximately (without skin or bones)
  • A pinch of salt and pepper
  • 3 slices of sliced bread
  • Breadcrumbs (for the batter)
  • Olive oil (for brushing)
  • For decoration:
  • two small zucchini (for the ears)
  • 6 carrots
  • 24 black olives
  • 12 squares of cheese (for the tooth)
  • Mayonnaise
  • Preparation of spinach and salmon meatballs:

    • Blanch the spinach in boiling water for 5 minutes, drain well.
    • Chop the onion very finely.
    • Cut the salmon, white bread and spinach into thin strips. (If you have a chopper or a food processor, you can chop everything together.)
    • In a bowl, combine all the ingredients chopped in step 3, with the onion, the zest of half a lemon, salt and pepper and stir well until you get a homogeneous mixture.
    • Preheat the oven to 200 °.
    • With oiled hands, form balls of about 4-5 cm in diameter or to taste and coat them with breadcrumbs.
    • Place the balls in a suitable baking dish, brush them with a little olive oil and bake for 15-20 minutes. If you like, instead of cooking them, you can fry them in hot oil.
    • Cut the zucchini lengthwise with a knife and peel the carrots, cutting them in half. Cook both vegetables on the grill.
    • To assemble the plate, join two meatballs as a mustache and make some stripes with mayonnaise. Place the grilled zucchini for the ears, the carrot in the mouth and a square of cheese to simulate the tooth.
