  • 100 g. Achiote pasta EL YUCATECO
  • 1 kilo of pork leg meat cooked and shredded
  • 1 cup of orange juice
  • 1/4 cup vinegar
  • 2 tablespoons lemon juice
  • 1/4 split onion
  • 1 teaspoon salt
  • 1 clove garlic
  • 1 tablespoon of oil
  • 2 cups of broth where the meat was cooked
  • 1 cup of lard
  • How to prepare the pibil pasta

1.-Dilute the achiote paste in the orange juice, vinegar, lemon juice, in the blender add the annatto, onion, salt and garlic, mix everything well.
2.-Heat the oil, add what you have mixed, let it cool for 3 minutes, add the broth you have reserved, let it boil for 10 minutes, add the meat, let it all boil (if necessary add a little water or broth) . Take it out of the pan, melt the butter until it starts to smoke a little, put the meat back in, let it cool for at least 10 minutes. Serve with beans and red onion.
